Butter is pointless if the mayo is put onto the bread? The whole point of using mayo is to increase crispiness due to the higher smoke point so adding the butter just isn’t necessary

Make this if you want a BLAND grilled cheese. If you want taste, toast mayo (that’ll be the inside of the sandwich) then put pepper jack and sharp cheddar cheese inside, then spread butter on the outside and toast it. That’s a grilled cheese.
