At Casa Botin, the cochinillo is roasted whole in clay dishes until the skin turns almost glassy and the meat stays incredibly juicy. Then you go downstairs and find a wine cellar that is older than the restaurant itself! Spain is very good at proving that you don't need much when the ingredients and the technique are this good.
