Ma'am I really appreciate for the love for us Filipinos but you need to grilled the eggplant, when you grilled it the umami flavours will elevate it more. I developed a similar sentiment when I worked at a chocolate factory and my entire team was Filipino. I'm Korean. they took me in like family and shared food with me all of the time. they said I can come visit them on their mango farm when they retire
