Heat a pan over medium heat and cook for about 5–7 minutes per side, depending on thickness, until the centre reaches 74°C (165°F). Set aside to rest, then slice. In the same pan, melt 1 tbsp butter. Add the minced garlic and cook for 30–60 seconds. Pour in the cream, then stir in Parmesan, garlic powder, Italian seasoning and black pepper. Simmer gently for 2–4 minutes until creamy. Remove from the heat. Combine the softened butter, minced garlic, parsley and Italian seasoning in a small bowl until evenly mixed. Preheat the oven to 200°C (400°F).
