🍝 Creamy Cajun Chicken & Spinach Tortellini 🧀🌿 Y’all, I know this doesn’t look like much, but it was TASTY! 😂 Sometimes the ugly duckling of dinner turns out to be pretty darn good. Plus my son went back for seconds. That right there is the real test, trust me. I used ground chicken because that’s what I had, but I think this would be even better with bite-sized pieces of chicken breast. Next time! INGREDIENTS • 20 oz cheese tortellini • 1 lb ground chicken (or diced chicken breast) • 1 container fresh spinach (5 oz) I might use half of that next time • 2 tbsp butter • 2 cloves garlic, minced (or 1 tsp garlic powder) • 1 cup heavy whipping cream • 2 oz cream cheese • ¾ cup shredded Parmesan • ½ cup chicken broth or reserved pasta water • 1–2 tsp Cajun seasoning, to taste • ½ tsp onion powder • ¼ tsp smoked paprika (optional) • Black pepper to taste DIRECTIONS 1. Cook tortellini according to package directions. Reserve ½ cup pasta water before draining. 2. Brown the ground chicken in 1 tbsp butter, breaking it into crumbles. Season with ½ tsp Cajun seasoning, onion powder, and black pepper. Cook to 165°F. If using diced chicken breast instead, cook the pieces until they reach 165°F. 3. Add the remaining butter and garlic. Cook for about 30 seconds. 4. Stir in the heavy cream, cream cheese, and ¼ cup broth or pasta water. Simmer gently over medium-low heat until smooth. 5. Reduce the heat and gradually stir in the Parmesan until melted. 6. Add the spinach and stir until wilted. Yes, the entire 5 oz container! Evidently, we’re eating our greens today. 🤣 7. Add the tortellini and toss until coated in that creamy Cajun sauce. Add a splash of pasta water if needed. MY VERDICT: Delicious, even if it wasn’t winning any beauty contests! 😂 Next time, I’m trying it with diced chicken breast. #CajunPasta #Tortellini #EasyDinner #CreamyPasta #WhatsForDinner
