It finally feels like October here in Missouri! Cold, windy, overcast… all the convincing I needed to put a pot of chili on. 🌶️🍂 And since it’s Friday, we’re putting it on hot dogs and calling it dinner. A little shredded cheese on top and I’m happy. 🌭🙌 Here’s how I make mine if you need a little dinner inspiration! HOMEMADE CHILI 🌶️ Ingredients: • 1 lb lean ground beef • 1 medium red onion, diced • 4 cans chili beans, undrained • 1 can kidney beans, rinsed and drained • 1 can diced tomatoes, undrained • 1 tsp salt • 2 tsp freshly cracked black pepper, divided • 3 tbsp chili powder • 2 tbsp cumin • 2 tsp cayenne pepper • 2 tsp garlic powder • 2 tsp onion powder • 1 tsp dried oregano • 1 tsp paprika • 1 tsp smoked paprika How to make it: 1. Brown the ground beef and diced onion in a large pot over medium-high heat. Season with the salt and 1 teaspoon of black pepper. Cook until the beef is browned and the onion is softened. Drain excess grease if needed. 2. Add the chili beans with their sauce, the rinsed and drained kidney beans, and the diced tomatoes with their juices. 3. Stir in all remaining seasonings, including the other teaspoon of black pepper. 4. Simmer on low for 1 hour, stirring occasionally. 5. Serve with crackers and cheese, or spoon over hot dogs and add your favorite toppings! I season by taste, so these measurements are approximate. Adjust to your liking—especially the cayenne if you prefer less heat! #ChiliDogs #ChiliSeason #HomemadeChili #FallCooking #ComfortFood
