First, preheat your oven to 180°C (160°C fan) and line a square baking tin with baking paper. Next, break the chocolate into pieces and melt it with the butter in a microwave, stirring every few seconds until smooth. Leave it to cool slightly, then mix in the sugar and add the eggs one at a time, stirring well. Sift in the flour and cocoa powder and fold everything together until you have a smooth mixture. Add the chocolate chips if you want extra chocolate flavour. Pour the mixture into the baking tin and spread it evenly. Bake in the oven for 25–30 minutes, until the top is set but the middle is still slightly soft. Carefully remove the tin from the oven and leave the brownies to cool before cutting them into squares.
