@saltnpepperhere: Tis the season for bone broth 🤧 To get something so nourishing and delicious from mostly things that would otherwise be thrown away is like wizardry, don’t you think?? Why I prefer this OVEN METHOD: ✔︎ Maintaining consistent low heat to extract collagen from the bones without melting it. The temperature-controlled environment of the oven gives peace of mind that I won’t accidentally over boil and melt the collagen. ✔︎ Ideal if you prefer not to leave the stove top on for hours or overnight, especially gas burners. And no need to run the noisy fume hood. It’s the little things 😆 ✔︎ While Instant Pot is faster, the oven gives me more flexibility to deal with the straining / storing when it’s convenient because I can leave it anywhere from 12 to 18 hrs. ✔︎ My @Le Creuset is bigger than my Instant Pot so I can make more each time. You can bake the drained bones until they crumble. Grind them to a powder & store them in the freezer. I add it to all kinds of my food & a topper for my dogs' food.

I think the main reason you get the gelatinous out of it is using feet and other parts of the chicken that people are grossed out by. I achieve the same in my instant pot. But you cannot get that result from just breast carcasses.. you need the feet.. neck and all the parts of the chicken .. I bet yours is just the best by looking at it. 🥰

The feet are really the most important part for the gel like consistency.

Can I use the same recipe for calf bone broth too?
If you roast the bones, do you still blanche them afterwards ?

You’d be better off clarifying your broth after, no blanching the bones, it loses a lot of nutrients. When your broth is done, you can reboil it to remove the impurities or actually use egg whites mixed with minced meat to clarify the broth, that’s how it’s done in restaurants.

You are leaching out heavy metals from the bones because you are cooking it too long.
