@thewellbalancedwhisk: Are those olives? 👀 Not even close. Meet kiwi berries! 🥝 These tiny, smooth-skinned cousins of the kiwi are sweet, a little tart, and surprisingly delicious in a savory chutney. I turned them into a sweet-tart, rosemary-kissed chutney for pork chops, because an ordinary weeknight dinner deserves a little something unexpected. And the best part? The chutney is ridiculously easy. ✨ KIWI BERRY CHUTNEY ✨ Ingredients * 2 cups fresh kiwi berries, trimmed and halved * 2 large shallot, finely diced or sliced thin * 1 tbsp olive oil * ¼ cup light brown sugar (add more to taste) * ⅓ cup apple cider vinegar * 2 tbl ginger-garlic paste * 1/2 tbl Diamond Crystal kosher salt (brand matters in terms of Saltiness) * ¼ tbl black pepper *1 -2 tbl ground coriander *1 tbl Worcestershire *2 tsp ground cinnamon. * Pinch of red pepper flakes * 1 small sprig fresh rosemary Instructions 1. Heat olive oil in a saucepan over medium heat. Sauté the shallot for 2–3 minutes until softened. 2. Stir in the ginger-garlic paste and cook for another 30 seconds. 3. Add the kiwi berries, brown sugar, apple cider vinegar, salt, pepper, coriander, and red pepper flakes. Add Worcestershire and cinnamon 4. Nestle in the rosemary sprig and simmer uncovered over medium-low heat for 15–20 minutes, stirring occasionally. 5. Lightly mash some of the berries to create a saucy consistency while keeping plenty of texture. 6. Remove the rosemary. Taste and adjust the salt, vinegar, or sweetness as needed. Spoon generously over seared pork chops! Save this one for the next time your weeknight dinner needs a little personality. 💚 Follow @wellbalancedwhisk for more everyday dinners with an unexpected twist. #KiwiBerries #PorkChops #ChutneyRecipe #WeeknightDinner #DinnerInspiration
