Pan size: 9 × 13 inches
Oven temperature: 350°F
Bake time: About 28 minutes; check a few minutes early, as ovens and pans vary.
Ingredients
Blondies
• 1 cup unsalted butter (2 sticks)
• 2⅓ cups all-purpose flour
• 1½ teaspoons baking powder
• ½ teaspoon salt
• 1 teaspoon ground cinnamon
• ¼ teaspoon ground nutmeg
• 1⅔ cups packed brown sugar
• 2 large eggs
• 1½ teaspoons vanilla extract
• About 1 teaspoon vanilla bean paste
Cinnamon Apples
• 2 cups peeled, chopped apples, such as Honeycrisp
• 1 tablespoon unsalted butter
• ¾ teaspoon ground cinnamon
Maple Cinnamon Cream Cheese Frosting
• 6 ounces cream cheese, softened
• ¼ cup unsalted butter (½ stick), softened
• ¾ cup confectioners’ sugar
• 3 tablespoons maple syrup
• 1 teaspoon ground cinnamon
• About 1 teaspoon vanilla bean paste
Instructions
1. Prepare the oven and pan.
Preheat the oven to 350°F. Line a 9 × 13-inch baking pan with parchment paper, leaving an overhang for lifting out the blondies.
2. Brown the butter.
Melt 1 cup butter in a large skillet over low heat. Increase the heat to medium-low and cook, stirring frequently, until the butter turns light golden brown and smells nutty. Remove from the heat and let cool until warm, rather than hot.
3. Combine the dry ingredients.
In a medium bowl, whisk together the flour, baking powder, salt, cinnamon, and nutmeg. Set aside.
4. Cook the apples.
In a separate skillet, melt 1 tablespoon butter over medium heat. Add the chopped apples and sauté for about 10 minutes, stirring occasionally, until slightly softened. Stir in ¾ teaspoon cinnamon. Remove from the heat and let cool slightly.
5. Mix the batter.
In a large bowl, use a hand mixer to combine the cooled brown butter, brown sugar, eggs, vanilla extract, and vanilla bean paste until smooth. Fold in the dry ingredients with a spatula just until combined, then gently fold in the cinnamon apples.
6. Bake.
Spread the batter evenly into the prepared pan. Bake for about 28 minutes, checking a few minutes early. The top should be golden brown and the center set, with no jiggle. A toothpick inserted into the center should come out with moist crumbs, but no wet
