✨ One-Bowl Fruit Crumble Bars ✨ If you’ve been here for a while, you know I have a soft spot for recipes that are simple, adaptable and made with real ingredients. This is one of those recipes. One bowl. One pan. Just a handful of pantry staples. And whatever fruit is in season (or waiting in your freezer). This version is made with wild blackberries that I foraged just a short walk from my home. 🌿🫐 Fun fact: I don’t actually grow blackberries in my garden! While I love growing food, blackberries are so abundant around my community that I happily leave them in the wild and enjoy foraging them each summer. 💾 Save this recipe because you can make it all year long. 🍴 Ingredients • 1 cup rolled oats • 1 cup all-purpose flour • ½ cup brown sugar • ½ tsp baking powder • ¼ tsp salt • ½ cup melted butter • 1 tsp vanilla extract (optional) • 2 cups fruit of choice For the filling (Optional to toss): • 2 tbsp granulated sugar (adjust to taste) • 1 tbsp cornstarch • 1 tsp lemon juice 📝 Method 1️⃣ Preheat oven to 350°F (175°C). Lightly grease an 8×8-inch baking dish. 2️⃣ In one bowl, combine the oats, flour, brown sugar, baking powder and salt. Stir in the melted butter (and vanilla, if using) until the mixture resembles coarse crumbs. 3️⃣ Press half of the mixture firmly into the pan. 4️⃣ Toss the fruit with the sugar, cornstarch and lemon juice, then spread evenly over the crust. 5️⃣ Sprinkle the remaining crumble over the top. 6️⃣ Bake for 35–40 minutes, or until golden brown and the fruit is bubbling. (Add 5–10 minutes if using frozen fruit.) 7️⃣ Cool before slicing for the cleanest bars. 🌸 Delicious with: 🍓 Spring: Rhubarb or strawberries 🫐 Summer: Blackberries, blueberries, raspberries or peaches 🍎 Fall: Apples or pears with cinnamon ❄️ Winter: Frozen mixed berries 💡 Best served slightly warm with vanilla ice cream or whipped cream. I baked mine in my stoneware baking dish, which goes from oven to table beautifully and bakes everything so evenly. Which fruit would you try first? From my kitchen to yours, 🌸 Erin
