I am from belgium. How i make my egg salad is fairly easy. I use some fresh parsly and a spice mix called aromat. so boiled eggs, scramble them, 1 spoon mayo/egg, litlle dijon mustard like and small teaspoon(never the hotdot mosterd), fresh parsley minced, salt, black pepper and aromat

I’ve made mine this way a lot over the years, but I don’t toast the bread, I think it helps with tasting the mayo and mustard.

It’s like an egg salad sandwich with scrambled eggs instead of hard boiled. I usually cook an egg over hard, toast my bread put cheese and mustard on the toast with the egg.
