@distorted_dishes: 🥔🥬🍲 potato & leek soup 🥔🥬🍲 ingredients: - whites of 2 leeks, sliced & rinsed - 1 yellow onion, roughly sliced - 1/4 cup white wine vinegar (I used red bc I was out) - 2-3 pounds of gold potatoes (or enough to fill half your pot), peeled and cubed (SAVE THOSE PEELS!!!) - 5 cloves garlic, minced - 1 sprig rosemary, minced - dried thyme - a lot of salt & pepper - 4 cups veggie broth (or enough to cover the potatoes fully) - 1/4 cup plain Greek yogurt or heavy cream method: 1) Heat up oil in a large pot and sautee the leeks and onion until significantly softened & when bottom begins to char, 7-10 minutes 2) deglaze with white wine vinegar (or broth if you don’t have any), add in garlic, rosemary, thyme, salt, pepper, and the cubed potatoes, sautee together for 2-3 minutes 3) add in the veggie broth, bring to a boil, drop the heat to low and simmer with the lid on for 20-30 minutes 4) while soup is simmering, cover your potato peels with some oil, salt, pepper, and paprika and pop into the oven at 400 F until crispy (I saw this on an old @ALFIE STEINER video, highly recommend!!) 5) once potatoes are cooked then use an immersion blender to blend until smooth. Then add in your yogurt or heavy cream, add more salt and pep, and serve with the crispy potato peel toppings
