Instructions: Remove the lobster meat from the shells and cut it into bite-sized pieces. In a bowl, gently combine the lobster meat with mayonnaise, lemon juice, chopped chives, salt, and black pepper. Brush the brioche buns with melted butter and toast them in a skillet until golden and crisp on the outside. Add lettuce if desired, then generously fill each bun with the lobster mixture. Garnish with extra chives and a squeeze of fresh lemon juice. Serve immediately with crispy fries and lemon wedges.
