this weekend revolved strictly around caramelized onions 🤭 on Friday Noah made French onion soup with homemade bone broth and used the bone marrow from the bones for bone marrow butter for our french dip sandwiches which paired perfectly with our French onion soup that we had today 🤤 will be posting that video soon! French onion soup with homemade beef broth Beef broth 4-5 lbs femur bones 2 yellow onions 4 carrots 4 stalks celery 1 tsp black peppercorns 1 tbsp salt Any herbs you have, I used sage, thyme, 3 bay leaves 8 cloves garlic 1 tsp garlic Water to cover French onion soup A ton of yellow onions, I cut up 5 small / medium onions. ½ stick of butter. 3 cloves garlic 1 tsp worstechire 4 cups beef broth ½ cup brandy 2 cups homemade croutons 1 cup gruyere Chives To make the broth, roast the bones, carrots, onions, and celery for an hour in a 400F oven. Remove and add to a large pot. Add in the rest of the broth ingredients and bring to a boil. Reduce to a very low simmer, with just a lazy bubble coming to the surface every few seconds. Simmer for 4-10 hours. Once finished, strain the broth using a mesh strainer. This is far too much stock for the french onion soup, so freeze as much as you want. Caramelize the yellow onions with plenty of butter (½ stick should be good). Cook at a very low temperature, stirring the onions every 10-15 minutes. It should take about 2-4 hours to fully caramelize. When the onions are caramelized, add in the garlic and turn up the heat to medium. Cook for 2-3 minutes. Add in the brandy and cook until evaporated. Add in the broth and bring to a simmer. Add to your croquettes and cover with homemade croutons and cheese. Bake in a 400F oven for 10-20 minutes, until the cheese is golden brown. Remove and serve with chives on top. #fyp #cooking #chicago #frenchonionsoup #soup
