Spicy coconut rice and chicken 🥥🌶️🐔 This was a spur of the moment dish I put together on a random Thursday evening and it turned out PERFECT. The aromatics, lightly salty/sweetened coconut flavor in the rice, and juicy seared chicken thighs pair so well together. Try it out and let me know what you think! Follow along for more cozy dishes @marisakapeal 🙏🏼♥️ Chicken (makes 4-5 servings) * 6 boneless, skinless chicken thighs (approx. 1½–2 lb / 680–900 g) * 1 tsp garlic powder (3 g) * 1 tsp onion powder (3 g) * ½ tsp cayenne pepper (1 g) * 1 tsp paprika (2 g) * ½ tsp red pepper flakes (1 g) * ½ tsp salt (3 g) * 1 tsp dried rosemary (1 g) * Olive oil, for searing Spicy Coconut Rice * 2 cups uncooked long-grain basmati rice (approx. 370–400 g) * 1 can (13.5 oz / 400 ml) full-fat coconut milk * Water, as needed for cooking * 1 tbsp olive oil (14 g) * 1 cinnamon stick * 2 bay leaves * 6 green cardamom pods, lightly crushed * 1 tsp whole cloves (approx. 2 g) * 1 tsp cumin seeds (2 g) * 1 tbsp ginger paste (15 g) * 1 red bell pepper, diced (approx. 150 g) * 2–3 green chilies, sliced * ½–1 cup green peas (75–150 g) * ½ tsp salt (3 g) * ½ tsp sugar (2 g) * ¼ tsp chicken bouillon powder (approx. 1 g) * ½ tsp paprika (1 g) * ½ tsp cayenne pepper (1 g) * ½ tsp curry powder (1 g) * Fresh chopped parsley, for garnish 1. Pat chicken thighs dry and coat evenly with the seasoning. Massage into the chicken and marinate for 30–60 minutes. 2. Sear chicken over medium heat with a drizzle of olive oil for approximately 3–5 minutes per side, or until deeply golden and cooked through. Remove and set aside. 3. In the same pan, add a drizzle of olive oil, cinnamon stick, bay leaves, cardamom, cloves, cumin seeds and ginger paste. Sauté for 30–60 seconds until fragrant. 4. Stir in diced bell pepper, green chilies and peas. Cook for 2–3 minutes until slightly softened. 5. Pour in coconut milk, salt, sugar, chicken bouillon, paprika, cayenne and curry powder. Stir and bring to a gentle simmer. 6. Add the thoroughly rinsed and drained basmati rice. Add enough water so the combined liquid just reaches the surface of the rice. Stir gently, cover tightly and cook over the lowest heat until the rice is tender and the liquid has been absorbed, 15–20 minutes. Cooking time and water needed may vary. Steam 10 minutes. Top with fresh parsley. #chicken #onepan #cooking #kitchen #Foodie
