Beef Chili | Save Recipe ⬇️ Servings: ~18 Prep Time: 15 minutes Cook Time: 45 minutes Total Time: ~1 hour Ingredients 15 strips uncooked bacon 3 large yellow onions, diced, about 3 cups 3 red bell peppers, diced 9 cloves garlic, minced 3 lbs ground beef 3 tablespoons brown sugar 3 tablespoons chili powder 3 tablespoons ancho chili powder 4½ teaspoons smoked paprika 1 tablespoon cumin Meat Church Blanco, to taste (alternatively used salt, pepper garlic to taste) 4 cups beef broth 3 (15 oz) cans dark red kidney beans, lightly rinsed and drained 3 (15 oz) cans black beans, lightly rinsed and drained 3 (14.5 oz) cans fire-roasted diced tomatoes, undrained 3 (7 oz) cans fire-roasted green chiles ¾ cup tomato paste 3 tablespoons Worcestershire sauce For Serving Sour cream Shredded cheddar cheese Corn chips Directions 1. Place the chopped bacon in a large Dutch oven or heavy-bottomed pot over medium heat. Cook until crisp and cooked through. Remove the bacon with a slotted spoon and place on a paper towel-lined plate. Leave about 1½ tablespoons of bacon grease in the pot. 2. Add the diced onions and red bell peppers to the bacon grease. Cook for 3–5 minutes, stirring occasionally, until the vegetables begin to soften. 3. Add the minced garlic and cook for about 30 seconds, until fragrant. 4. Add the ground beef and break it apart with a spatula. Once the beef is about 50% browned, add the brown sugar, chili powder, smoked paprika, cumin, and Meat Church Blanco. Stir well and continue cooking until the beef is fully browned and the seasoning is evenly incorporated. 5. Add the beef broth, kidney beans, black beans, fire-roasted tomatoes, green chiles, tomato paste, and Worcestershire sauce. Add the cooked bacon (chopped up) back into the pot and stir everything together. 6. Bring the chili to a boil, stirring frequently. Let it boil for 1–2 minutes. 7. Reduce the heat to low and simmer uncovered for 30–45 minutes, stirring occasionally. The chili will thicken as it cooks and the flavors will develop. 8. Taste the chili near the end of the simmer. If it needs more seasoning, add additional Meat Church Blanco a little at a time. You can also add more chili powder or cayenne if you want more heat. Do not add salt unless you’ve tasted the finished chili first. The bacon, broth, Worcestershire, and Blanco will already contribute salt. 9. Serve hot with sour cream, shredded cheddar cheese, and corn chips.
