Crispy Cheesy Scalloped Potatoes 🥔🔥 Recipe👇🏽 Ingredients 2 kg yellow potatoes Salt and black pepper for layering Cheesy Béchamel Sauce ½ cup (113 g) unsalted butter 1 garlic clove, grated ½ chicken bouillon cube, grated 1 tsp black pepper ½ tsp nutmeg ½ tsp smoked paprika ½ tsp salt 2 sprigs fresh thyme, leaves stripped ½ cup (60 g) all-purpose flour 4 cups (960 ml) whole milk 1½ cups (360 ml) chicken broth A 3-finger pinch of fresh parsley A handful of mozzarella A handful of marble cheddar Cheesy Topping Parmesan, mozzarella and marble cheddar Instructions Peel your potatoes and slice them into thin coins, about ⅛ inch (3 mm) thick. A mandoline makes this much easier. Try to keep the slices even so they cook at the same rate. Soak them in cold water for 30 minutes, then drain and pat them completely dry with paper towels. For the béchamel, melt your butter over medium heat. Add the garlic, chicken bouillon, black pepper, nutmeg, smoked paprika, salt and thyme leaves. Whisk in the flour and cook for 1–2 minutes. Gradually pour in the milk, whisking as you go to keep everything smooth. Add the chicken broth and continue whisking until the sauce comes together. Let it gently simmer until it thickens slightly and coats the back of a spoon, but keep it pourable so it can flow between the potato layers. Take it off the heat, then stir in the parsley, mozzarella and marble cheddar until melted and creamy. Now for the fun part. In a deep 9 × 13-inch baking dish that’s at least 2.5 inches deep, add a layer of potatoes, season lightly with salt and pepper, then spread over some of that cheesy béchamel. Keep repeating until you have at least 8 layers, distributing the sauce between them. Finish with the remaining sauce and load up the top with Parmesan, mozzarella and marble cheddar. Cover with foil and bake at 375°F (190°C) for 30 minutes. Remove the foil and bake for another 35 minutes. Insert a knife into the centre to check if the potatoes are tender. If they’re still firm, continue baking in 10-minute increments until the knife slides through easily. For the grand finale, broil on high for 2–4 minutes until the top is golden, bubbly and CRISPY. Keep an eye on it because broilers vary and that cheese can go from golden to burnt real quick! Let it rest for 10–15 minutes before cutting into it. This helps the layers settle so you get a beautiful scoop of creamy potatoes with that crispy cheese crust. If it don’t crunch, we don’t munch. 🔥
