INGREDIENTS Mozzarella Sticks 1 lb block mozzarella cheese 1 cup all-purpose flour 2 eggs, whisked 1–1½ cups Italian seasoned breadcrumbs Breading Seasoning ½ tsp salt ½ tsp black pepper 1 tsp garlic powder 1 tsp onion powder 1 tsp paprika ½ tsp cayenne pepper Nashville Hot Oil ½ cup hot frying oil 1 tbsp cayenne pepper 1 tsp brown sugar ½ tsp smoked paprika ½ tsp garlic powder Pinch of salt For Frying Vegetable or peanut oil DIRECTIONS Cut mozzarella into thick sticks, about ¾–1 inch thick. Set up three bowls with flour, whisked eggs, and breadcrumbs mixed with all the breading seasonings. Coat each stick in flour, egg, breadcrumbs, then egg and breadcrumbs again for a thick, crispy coating. Make sure the cheese is completely covered. Freeze for 45–60 minutes until very firm. Heat frying oil to 350°F. Fry in batches for approximately 1½–2 minutes until golden and crispy. Remove and drain on a wire rack. Combine Nashville hot seasonings in a bowl. Carefully whisk in ½ cup hot frying oil, slightly cooled, until combined. Brush the Nashville hot oil over the crispy mozzarella sticks until fully coated.
