It starts with a fresh iCloud Backup on the old phone, with every app switched on under Show All Apps so nothing is skipped. Wi-Fi and Bluetooth on the old iPhone get it ready to hand everything over. If the new iPhone was already set up, Erase All Content and Settings gives it a clean start. Then you choose Quick Start, phone to phone with the swirl code, or sign in with your Apple Account and restore from iCloud.
