The first and last time my Mom ever cooked Thanksgiving dinner was a Martha Stewart turkey recipe. It said to brine 2-4 hours. The dash didn’t print… she left it in the salt water brine for 24 hours. It was the most beautiful good awful tasting turkey ever. We all ate a bite and all agreed we might die if we ate it. 😂 She never tried again. 😂😭

I did that Martha recipe for years. It’s fine. I now spatchcock and do a compound butter under the skin. A thousand times better, cooks more evenly, and cooks in 1/3 the time
