Make a well in the center and pour in warm coconut milk and beaten egg, then stir with chopsticks until a shaggy dough forms. Add the softened margarine, transfer to a floured counter, and knead for 12-15 minutes until the dough is smooth, soft, and stretches into a thin, elastic windowpane. Return to the bowl, cover with plastic wrap, and let rise in a warm spot until doubled — about 70 minutes. Punch the dough down, roll it out to about 1.0 cm thick, and cut out donut shapes with a cutter. Don't throw away the little centers — those are donut holes! Cover and proof for another 15 minutes until they're plump and pillowy. Heat oil in a pan to 160°C, gently lower the donuts in, and fry for 75-105 seconds per side until gorgeously golden. Drain on paper towels. While still warm, dip each one in mocha glaze, or fill with Nutella, or shower with caramel drizzle + sea salt.
