Bringing back a childhood favorite. 🫐🤤 Homemade Blueberry Pop Tarts Ingredients Dough: 2 cups (280g) all-purpose flour 1 tbsp granulated sugar 1 tsp kosher salt ¾ cup (170g) cold unsalted butter, cubed or grated ⅓ cup + 3 tbsp cold milk 1 egg, for egg wash **Blueberry Compote:** 1 lb fresh or frozen blueberries ⅓ cup (70g) granulated sugar 2 tsp cornstarch 1 tsp lemon zest 1 tsp lemon juice 1 tsp vanilla extract Icing: 1 cup powdered sugar 2–3 tbsp milk Rainbow sprinkles, for topping Instructions: 1. Whisk together flour, sugar and salt. Add the butter and work it into the flour with your fingertips or a pastry cutter until pea-sized crumbs form. 2. Slowly drizzle in the cold milk, stirring until a soft, smooth dough forms. 3. Transfer to a lightly floured surface and shape into a thick disc. Wrap tightly and refrigerate for at least 1 hour. 4. For the compote, combine blueberries and sugar in a saucepan. Bring to a simmer over medium heat and cook for about 5 minutes, stirring occasionally. 5. Whisk cornstarch with 2 tsp water. Add to the blueberries and stir constantly as the mixture thickens. Stir in lemon zest, lemon juice and vanilla. Simmer until thick and jam-like, then refrigerate until completely cooled. 6. Roll the chilled dough into a 12 x 16-inch rectangle. Trim the edges and cut into 16 equal rectangles. 7. Whisk the egg with 1 tbsp water. Add about 1 tbsp of compote to the center of 8 rectangles. Brush the borders with egg wash and top with the remaining dough. 8. Seal the edges with a fork, poke a few holes in the tops and brush with egg wash. Refrigerate for 10 minutes. 9. Preheat oven to 350°F. Bake for 20–25 minutes, or until golden brown. Cool for 10 minutes before transferring to a wire rack. 10. Finish with icing and rainbow sprinkles. 🫐✨ 🎥 @healthienut
