@heymombakes: Mini Cinnamon roll cookies!! Bite sized cookies that melt in your mouth. Delicious and easy to make! Cookie: 1 cup room temp butter 1 cup sugar 1 egg 2-3 tsp vanilla extract 3 cups all purpose flour 2 tsp baking powder Filling: 1/2 cup soft butter 1/2 cup brown sugar 1/4 cup flour 2 tsp cinnamon Mix filling ingredients together and set aside. Preheat oven to 350° For the cookies: Cream butter and sugar together, add in egg and vanilla. Scrape down the sides after mixing. Mix flour and baking powder together then add to the wet mixture. Let mix until the dough comes together, it takes a few minutes. Lightly flour your countertop and roll dough into a rectangle as shown. Spread all of the filling across the entire area. Cut into strips as shown and roll up into cinnamon roll shape. Place on a parchment lined baking sheet and gently press down to flatten slightly. Bake at 350° for 8 minutes.
