BB Pumpkin Chocolate Chip Cookies 🍪🤎 The name is long but these cookies are super simple and easy! Pumpkin puree: 2/3 cup pumpkin puree strained to 1/3 cup (160->80g) Wet ingredients: 1 cup butter, browned (226g-> 185g) 1 1/4 cup brown sugar (250g) 1/2 cup granulated sugar (100g) 1 large egg, room temp 1/3 cup strained pumpkin (80g) 1 tbsp vanilla extract Dry ingredients: 3 cups Ap flour (390g) 1 tbsp cornstarch 1 tsp baking soda 3/4 tsp salt 2 cups chocolate chips Pumpkin Puree: 1.) Wrap the 2/3 cup of pumpkin puree in a cheese cloth or paper towels then squeeze and drain some of the water, you should be left with about 1/3 cup pumpkin puree To make the Browned Butter 🧈: 1.) Add the butter into a light colored pan over medium heat and stir continuously as the butter melts. Once melted the butter will start to foam and sizzle, keep stirring continuously 2.) As you stir the butter you’ll notice it start to change color and slowly get quieter, you can tell when your brown butter is ready once it goes silent and you can’t hear it anymore. The butter going silent indicates that all the water has boiled out! 3.) As soon as your butter is done, pour it into a separate bowl and allow to cool completely, you’re looking for your butter to be cool to the touch and slightly thicker than while hot (look in the video to see the thickness goal) Cookie dough: 1.) In a large bowl combine the cooled browned butter and sugars then stir until combined. Then mix in your egg, pumpkin puree and vanilla extract 2.) After mix in your cornstarch, baking soda, and salt. Lastly, fold in your flour and chocolate chips. Scoop and chill your dough in the fridge for at least two hours, but preferably overnight. (Mine are about 3 tbsp each) 3.) Once the dough has chilled in the fridge, bake at 350 for 9 to 13 minutes, the time is determined by how big you make your cookies. You can tell your cookie is done once the edges have become gold brown and the center is slightly under done 4.) Once baked cool completely before enjoying 🫶#fallbaking #cookies #brownedbutter #chocolatechip #pumpkinseason
