Growing up, I thought queso menonita was just… Mexican cheese. The kind my abuelita always had in the fridge. The kind that melted perfect in every quesadilla. I had no idea it carried a whole story inside it. A story about 20,000 people who left Canada in 1922 and rebuilt their entire lives in the dirt of Chihuahua. About a president who made them a promise, and a community who kept theirs. A hundred years later, still making cheese by hand, still aging it on wooden shelves, still selling it door to door. In Chihuahua, they still call it queso menonita, after the hands that first made it. Travel outside the state, and that same cheese has a different name on the label: queso Chihuahua. Two names, one story and most of us grew up eating it without ever hearing either half. This is the part of our food history nobody sits us down and teaches. We grow up eating it, loving it, building memories around it and never asking where it actually came from. That’s what this series is for. Not to make you feel like you missed something. To give you back a piece of your own plate that was always deeper than you knew. Our cocina was never just cooking it’s every hand that touched it before ours. Mexican, Mennonite, indigenous, immigrant. All of it is ours. All of it deserves to be known. I’ll keep digging up these stories as long as you’ll keep reading them. This is Language of the Cocina. 📍Save this one. Share it with someone who grew up on this cheese and never knew why. 👉 Follow @theerickespana every week I’m uncovering another piece of the food history you were never taught.
