@biggest.bites_: NUMBER ONE UDON 👇 Maru Udon are pioneers of udon noodles in Dubai and after six years, people are constantly returning as it’s that good. What impressed me most was seeing how they make their noodles from scratch every single day. They even have a dedicated udon factory with a high-tech machine imported from Japan, built to cut each noodle to precise measurements. But the machine is only half the story. The man operating it has the eye of a hawk, checking the thickness of the noodles at a glance. Chef Shinya, the Japanese chef leading the kitchen, is one of the most passionate chefs I've met, and you can taste that passion in his food. I watched his team turn udon into everything from incredible noodle dishes to udon chips and even doughnuts 🤌 The Niku Beef (64 AED) came in a gorgeous, hearty broth packed with a deep umami flavour. The Umakara Pepper (64 AED) is my go to stir fry there - the noodles are coated in their house-made Korean chilli oil and ya salaam there is so much flavour. But the star of the show for me was the Wagyu Kimchi Splash (74 AED). 📍 Maru Udon, Business Bay (also at Neighbourhood Food Hall)
