This venison backstrap with cowboy butter went viral for a reason! One of my most popular venison recipes is back, but this time we’re firing up the pellet grill! 🔥 #BearMountainBBQPartner Perfectly grilled backstrap topped with a garlic herb butter that takes it to the next level. I used @Bearmountain BBQ Tailgate Blend pellets for this cook, and the flavor was incredible! Find the full recipe below or at the link in my bio GRILLED VENISON BACKSTRAP WITH COWBOY BUTTER Ingredients Venison Backstrap 1–1½ lbs venison backstrap, trimmed 1 tbsp olive oil Salt and freshly cracked black pepper, to taste Cowboy Butter ½ cup unsalted butter, softened 2 tbsp fresh parsley, chopped 1 tbsp fresh chives, chopped 2 tsp Dijon mustard 2 tsp lemon juice 1 garlic clove, minced ½ tsp Worcestershire sauce ½ tsp smoked paprika ¼ tsp kosher salt ¼ tsp black pepper ¼–½ tsp chili flakes (optional) Instructions Preheat your pellet grill to 450°F. Pat the backstrap dry, coat with olive oil, and season with salt and pepper. Grill directly over the grates for approximately 3–4 minutes per side, or until the thickest part reaches 125–130°F for medium-rare. Use a meat thermometer since cooking times vary! Remove from the grill, loosely tent with foil, and rest for 10 minutes. Meanwhile, combine all cowboy butter ingredients in a bowl. Serve softened or gently melt for dipping, being careful not to overheat. Slice the backstrap into medallions and serve with plenty of cowboy butter! #VenisonRecipes #WildGameCooking #PelletGrill #BearMountainBBQ Venison Recipes | Cooking with Venison | Cooking with Wild Game | Wild Game Recipes
