Roasted Pumpkin Crisp Is Easier Than Pie (and More Delicious, Too) Try something new for Thanksgiving this year. Prep Time: 10 mins Total Time: 1 hr 30 mins Servings: 12 Ingredients 7 to 8 cups 3/4-inch chunks peeled and seeded pie pumpkin (2 1/2 to 3 lb.) 1 Tbsp. vegetable oil 1/2 tsp. salt Nonstick cooking spray 1 (8-oz.) pkg. cream cheese, softened 1 large egg 5 Tbsp. all-purpose flour 1 cup regular rolled oats 3/4 cup packed brown sugar 1 1/4 tsp. ground cinnamon 1/2 cup butter, cut up 1/2 cup pepitas (pumpkin seeds) 3 Tbsp. granulated sugar 2 tsp. cornstarch 3/4 cup apple cider Directions Preheat oven to 425°F. Line an extra-large baking sheet with parchment paper. Place pumpkin on prepared baking sheet. Drizzle with oil and sprinkle with salt; toss to coat. Roast pumpkin until edges are lightly browned, 30 minutes. It’s fine if the pumpkin is not tender at this point. Remove pumpkin from oven and set aside. Reduce oven temperature to 375°F. Meanwhile, coat a 2-qt. rectangular baking dish with cooking spray. In a small bowl beat together cream cheese, egg, and 1 Tbsp. of the flour until combined. For topping, in a large bowl combine oats, brown sugar, remaining 4 Tbsp. flour, and 1/2 tsp. of the cinnamon. Using a pastry blender, cut in butter until mixture resembles coarse crumbs. Stir in pepitas. In a small saucepan whisk together granulated sugar, cornstarch, and remaining 3/4 tsp. cinnamon. Whisk in cider. Heat over medium, stirring frequently, until thickened and bubbly. Spread half the cooked pumpkin over bottom of prepared baking dish. Drop about 20 small spoonfuls of cream cheese mixture over the pumpkin. Top cream cheese layer with remaining cooked pumpkin. Pour sauce mixture over pumpkin mixture; sprinkle with topping. Bake until topping is golden and pumpkin is tender, about 35 minutes. Let stand 10 minutes before #pumpkinrecipes #itsfallyall🍂🍁 #holidaycountdown #newrecipesposteddaily #followmyrecipes
