Slow Roasted Beef Brisket
Makes approximately 16 servings
Ingredients
1 whole beef brisket (about 12 lbs)
3 TB coarse salt
3 TB freshly ground black pepper
1/2 cup water
Instructions
1. Trim excess fat from the top and bottom of the brisket, leaving a layer of fat to help keep the meat moist during cooking.
2. Season the brisket generously on all sides with the coarse salt and freshly ground black pepper, rubbing the seasoning into the meat.
3. Place the brisket in a large roasting pan and refrigerate uncovered overnight to allow the seasoning to penetrate the meat.
4. The next day, preheat your oven to 260°F. Add 1/2 cup water to the roasting pan and cover the brisket tightly with aluminum foil, making sure the pan is completely sealed.
5. Roast for approximately 10–12 hours, or until the brisket is extremely tender. The meat should offer very little resistance when pierced with a thermometer or skewer.
6. Remove from the oven and let rest, still tightly covered, for at least 1 hour. Do not uncover during the resting period.
7. Uncover, transfer to a cutting board, and slice against the grain.
