CREAM OF ASPARAGUS SOUP
Serves 4
INGREDIENTS
• 1½ lb asparagus, woody ends trimmed
• 2 tbsp butter
• 1 medium yellow onion, diced
• 2 garlic cloves, minced
• 3 cups low-sodium vegetable broth
• ½ cup heavy cream, plus a little extra for the optional swirl
• 1–2 tsp fresh lemon juice
• Salt and freshly ground black pepper, to taste
INSTRUCTIONS
1. Cut asparagus into 1-inch pieces. Reserve 8–12 tips for garnish.
2. Melt butter in a pot over medium heat. Add onion and cook for 6–8 minutes, stirring occasionally, until softened without browning. Add garlic and cook for 30 seconds.
3. Add the chopped asparagus and broth. Bring to a gentle boil, reduce heat, and simmer for 10–15 minutes, until the asparagus is tender.
4. Meanwhile, simmer the reserved tips in a small saucepan of lightly salted water for 2–4 minutes, until just tender. Drain.
5. Remove the soup from the heat and blend thoroughly with an immersion blender. For an extra-silky texture, pass it through a fine-mesh strainer.
6. Stir in ½ cup cream. Warm gently over low heat without boiling. Add 1 tsp lemon juice, then taste and add more if desired. Season with salt and pepper. If too thick, add a splash of broth.
7. Ladle into bowls and top with the cooked asparagus tips. For the white swirl, drizzle about 1 tsp extra cream over each bowl and gently swirl with the tip of a spoon.
TIP: Trim away the tough, woody asparagus ends before cooking—they can leave the soup stringy even after blending.
