Let it marinate for at least 5 hours (overnight is better). Build a wood fire and wait until you have a bed of glowing, even embers. Place the lamb on the spit — sear the skin over high heat first, then lower to a slow roast for 5-6 hours, basting constantly with maltose & light soy sauce and drippings.
