RECIPE: banana bread tiramisu🍌 You loved my pumpkin tiramisu so I thought a banana version was in order. Baked in my favorite @Hedley & Bennett apron because you know we like to get messy around here :) This would be amazing drizzled with dulce de leche, too. . 3 ripe bananas, mashed 1 cup brown sugar 1/2 cup greek yogurt (or sour cream) 2 eggs 1 tsp vanilla extract 1/2 cup olive oil 1/4 cup milk of choice 2 tbsp cold brew (instant espresso works here too) 2 cups all purpose flour 1 1/2 tsp cinnamon 1/4 tsp nutmeg 1 tsp baking soda 1/2 tsp salt CREAM: 8 oz Mascarpone cheese 1 tbsp maple syrup 1 tsp Vanilla extract or Paste 1 cup heavy whipping cream, cold 2 tbsp powdered sugar 1/8 tsp salt SOAK AND ASSEMBLY: 1/2 cup cold brew 1 tbsp dark rum 1 tbsp cocoa powder, for dusting . Preheat your oven to 350 degrees Fahrenheit. Grease and line a standard loaf pan with oil and parchment paper, leaving overhang on each side. In a large bowl, whisk together mashed bananas, brown sugar, yogurt, eggs, vanilla, oil, milk, and cold brew. Add flour, cinnamon, nutmeg, baking soda, and salt. Fold batter until just combined. Transfer batter to prepared pan. Bake for 45-50 minutes or until a toothpick inserted comes out with a few moist crumbs. Let loaf cool completely (you can also bake a day ahead). For the cream, loosen your mascarpone by whisking in maple syrup and vanilla. Whip you cream and powdered sugar and salt until stiff peaks. Gently fold in the mascarpone. Chill until ready to assemble. For the soak, mix coffee and rum. To assemble, line loaf pan with parchment, leaving overhang for easy release. Slice bread in 4 horizontal slices (see video— you won’t use the top ‘domed’ slice, save it for snacking). Lay down banana bread, soak with half the coffee mixture, and add a layer of mascarpone cream on top. Repeat until you’ve used all of the bread. Reserve 1/3 of the cream for topping. Chill banana tiramisu for at least an hour or until ready to serve. Before serving, Top with remaining cream and dust with cocoa powder right before serving. Slice and enjoy. #bananabread #tiramisu
