I like my sisig extra crispy cooking up a sisig edit :) ingredients: - 1 lb pork belly - coarse salt - 2 tbsp butter - 1/2 red onion diced - 3 garlic cloves sliced - thai chilies chopped (up to your spice preference) - 1/4 cup chicken liver chopped - 1.5 tbsp calamansi juice (or lime) - 1 tbsp oyster sauce toppings: - fried egg - red onions diced - green onions chopped - thai chilies chopped - Mayo (1/4 cup mayo, 1 tbsp calamansi juice, 1 tsp sugar, 1 tsp salt and pepper) Directions: 1. Pat skin side of pork belly dry and leave open skin wide up in the fridge overnight 2. Preheat oven to 300F 3. Prick many holes into the skin (the holes should be shallow and not go all the way to the meat) 4. Create a tin foil basket and place the pork belly in skin side up 5. Fully cover the skin with coarse salt 6. Place pork into the oven at 300F for 1.5 hours 7. Remove salt and tinfoil from the pork and brush the skin with a layer of neutral oil 8. Place pork into an airfryer at 450F for 20 minutes or until the skin is crispy 9. While the pork is cooking, melt butter over a pan on medium heat. Saute red onions, thai chilies and garlic until aromatic (about 2 minutes) 10. Add in chicken liver and saute until fully cooked (around 5 minutes) 11. Toss in oyster sauce and calamansi juice and set aside until pork belly is ready to be added 12. Once pork is done cooking in the airfryer, let cool until safe to handle and chopped up into bite size-pieces 13. Toss pork belly into the pan until fully coated 14. serve over a sizzling plate (I didn't have one so I served over a pan) with a fried egg, mayo, red onions, green onions, and thai chilies enjoy with some rice :) #edit #cooking #sisig
