I had this issue my first few rounds and its so annoying. I definitely cut mine thicker, boiled my brine to combine everything and then let it cool down some then put into my jars with my pickles then water bath canned them! I still did soak them in pickle crisp for a while before putting them in jars bit they were crispy this way!

In Germany we boil the brine and give it on top of the cut and washed cucumbers. Put the lids on immediately. That’s it 😅 no canning anything.. we call it „einlegen“ the brines made of onions water vinegar dill and mustard seeds,. That’s al you need 😊

Cucumber variety matters. Then slice them and add them to ice water and store in fridge for 12-24 hours. Adding pickle crisp and not over processing. Our pickles are sooo crunchy and packed with flavor. Dill and bread & butter!

Use the mushy ones for dill pickle hummus. For crunchy pickles add a grape leaf to your jars.

For years I’ve cold pack them for 3 days then pour all the brine into a pot to boil plus I add and extra quart of water and vinegar and salt then re-seal them. Turns out amazing everytime

what kind of cucumbers are you using? they look over grown. the seed area like that can cause them to be mushy

I just use pickle crisp with a Mrs. Wages pickling brine and my pickles are still crispy after one year. Maybe it’s the variety of pickle? I have nothing else to offer. 🤷♀️
