Orange Blossom & Vanilla Cheesecake 🍊 Alrighty Guys, what happens when you turn a fragrance into something you can taste? Inspired by the rich vanilla, delicate orange blossom and creamy notes of @phlur’s Heavy Cream Eau de Parfum, I’ve created this indulgent baked cheesecake, finished with a silky vanilla cream and glossy candied kumquats. Rich, floral, citrusy and incredibly creamy. Ingredients: Biscuit base - 200g digestive biscuits - 100g unsalted butter, melted - Pinch of salt Cheesecake filling - 750g full-fat cream cheese - 200g caster sugar - 200g sour cream - 4 medium eggs - 15g corn starch - 1 vanilla pod, seeds scraped - 1 tsp vanilla extract - 1½ tsp orange blossom water - Zest of 1 orange Vanilla cream topping - 130g full-fat cream cheese - 170ml heavy whipping cream - 25g caster sugar - ½ tsp vanilla extract Candied kumquats - Kumquats, thinly sliced and deseeded - 250g caster sugar - 250ml water Method: 1. Blitz the digestives into fine crumbs, mix with melted butter and salt, then press into a lined 22cm springform tin. Bake for 10 minutes at 160°C. 2. Beat the cream cheese and sugar until smooth. Add the sour cream, vanilla, orange blossom water and orange zest, followed by the corn starch. Mix in the eggs one at a time on low speed. 3. Pour over the cooled base and bake at 140°C fan for approximately 55–65 minutes, until the edges are set and the centre has a gentle wobble. 4. Allow to cool gradually, then refrigerate overnight. 5. Gently simmer the sliced kumquats in sugar syrup for 15–20 minutes until translucent. Cool in the syrup. 6. Whip the heavy cream to soft-medium peaks. Separately mix the cream cheese, sugar and vanilla until smooth, then gently fold together. 7. Spread the vanilla cream over the chilled cheesecake and refrigerate for another 2 hours. 8. Finish with the candied kumquats, slice and enjoy! #PHLUR #HeavyCream #Cheesecake #OrangeBlossom #TheHealChef
