Crispy fried eggplants & crumbled feta salad✨ 2 eggplants, thinly sliced Salt Flour & salt for dredging Cooking oil for frying Pomegranate molasses sauce: 5 tbsp olive oil 1 lemon juice 1 clove of garlic, grated 2 tbsp pomegranate molasses Salt & pepper Bunch of parsley, chopped Chilli pepper( optional) 1.Slice the eggplants into 1/2 cm . Toss them with the salt and spread them on a baking sheet. Let drain for 15 minutes, then dry with paper towels. 2.When ready to fry, heat the oil to 176 C in a wok or deep fryer. Line a large plate with paper towel. Put the flour in a shallow wide bowl. 
3.Drain the eggplant slices and pat dry. Working in batches, dredge the eggplant slices in the flour, shaking off the excess, fry until golden brown, about 3 minutes. 4.Transfer the slices to lined plate with kitchen’s paper to drain. 5.Place the fried slices on a platter and drizzle the pomegranate sauce on top. Sprinkle with salt, pepper , parsley and red chili.
