@capucine.emily: Mushroom & Leek Quiche with Cabbage and Edamame Salad Ingredients For the crust: Serves: 4 200g all-purpose or whole-wheat flour (about 1 1/2 cups) 60ml olive oil (1/4 cup) 60ml water (1/4 cup) 1 tsp salt Or use a store-bought pie crust. For the filling 250g mushrooms, sliced (about 9 oz) 1 large leek or 2 small leeks, thinly sliced 4 eggs 200ml heavy cream (about 3/4 cup + 1 tbsp) 1/2 tsp ground nutmeg (if you have it) 1 handful fresh parsley, chopped 1 cup shredded Gruyère or cheddar For the salad 1/2 cabbage, thinly sliced 250g shelled edamame, cooked (about 1½ cups) 4-5 tbsp olive oil 3 tbsp red wine vinegar Method: 1/ Cook the vegetables Heat a drizzle of olive oil in a large skillet over medium-high heat. Add the sliced mushrooms and cook until their moisture has evaporated and they begin to brown. Add the sliced leeks and cook until softened and lightly caramelized, about 8-10 minutes. Stir in the chopped parsley, season with salt and pepper, and set aside. 2/ Make the crust Preheat the oven to 200°C / 400°F. In a bowl, combine the flour, olive oil, water and salt. Mix until a dough forms. If using whole-wheat flour, let the dough rest for about 10 minutes before rolling it out. This helps the dough become easier to handle and less likely to crumble. Roll the dough out on a lightly floured surface and transfer it to a tart pan. Press it into the base Prick the base with a fork and bake for 5-10 minutes. 3/ Prepare the filling In a bowl, whisk together the eggs, heavy cream and nutmeg. Season with salt and pepper. Stir in the cooked mushroom and leek mixture. Pour the filling into the pre-baked crust and sprinkle the shredded cheese evenly over the top. Bake at 200°C / 400°F for about 30 minutes, until the filling is set and the top is golden. Let the quiche rest for 5-10 minutes before slicing. 4/ Make the salad Thinly slice the cabbage and place it in a large bowl with the cooked, cooled edamame. Add the olive oil, red wine vinegar and salt. Toss well and adjust the seasoning to taste. #EasyRecipe #leek #familymeals #vegetarian #easydinner
