Bolzano Apple Cake 🍎 A soft, buttery Italian apple cake filled with delicate layers of apples, topped with an apple spiral and freshly grated nutmeg. Unlike traditional fluffy cakes, Bolzano Apple Cake uses very little flour and lots of thinly sliced apples, giving it a soft, almost custardlike texture. Ingredients * 1 stick (½ cup or 114 g) butter, plus extra for greasing * 2 large eggs * 1 cup (200 g) sugar * 1 vanilla bean or 2 teaspoons vanilla extract or paste * 4 Cosmic Crisp or locally grown apples * ½ cup (64 g) all purpose flour * 2 teaspoons baking powder * ½ teaspoon kosher salt * ½ cup whole milk, room temperature * 1 additional egg for brushing the top * Fresh nutmeg * Powdered sugar (optional) Instructions 1. Prepare your pan Preheat your oven to 375°F. Butter a 9 inch round cake pan, line the bottom with parchment paper, and lightly butter the parchment. 2. Melt the butter Melt the butter in a small saucepan over low heat and set aside to cool slightly. If using a vanilla bean, split it lengthwise, scrape out the seeds, and save them for the batter. Place the empty pod in the warm butter to add flavor. 3. Beat the eggs and sugar In a large bowl, beat the 2 eggs with half the sugar. Gradually add the remaining sugar and continue beating until the mixture becomes thick, pale, and creamy. It should fall from your whisk in ribbons. Mix in the vanilla seeds or vanilla extract. 4. Slice your apples Peel, core, and thinly slice all 4 apples. Set aside approximately 1 cup of the nicest slices to make the decorative spiral on top. 5. Make the batter Remove the vanilla pod from the melted butter and discard it. Slowly whisk the butter into the egg mixture. Add the salt, baking powder, and milk. Mix well, then whisk in the flour until smooth. The batter will be thinner than regular cake batter. 6. Add the apples Gently fold your sliced apples into the batter, leaving out the reserved cup. Make sure every apple slice is coated. It will look like there’s more apples than batter, and that’s exactly how it should be! 7. Assemble and decorate Pour the apple mixture into your prepared pan and spread evenly. Arrange the reserved apple slices on top, slightly overlapping them in a spiral pattern. Start around the outside edge and work toward the center. 8. Add the egg wash Beat the additional egg with a fork. Using a pastry brush, lightly brush the exposed apple slices with a thin layer of egg to help them turn golden while baking. Avoid letting excess egg pool on top. 9. Bake Bake at 375°F for approximately 55 to 60 minutes. Begin checking after 30 minutes. If the top is browning too quickly, reduce the temperature to 325°F. The cake is ready when the top is golden, the edges begin pulling away from the pan, and the center is set. 10. Finish with nutmeg As soon as the cake comes out of the oven, grate a tiny amount of fresh nutmeg over the top while it’s still hot. A little goes a long way! 11. Cool and serve Allow the cake to cool in the pan for at least 30 minutes before slicing. This helps the delicate apple layers hold together. Dust lightly with powdered sugar if desired, and serve slightly warm or at room temperature. Helpful Tips Apples: Cosmic Crisp, Honeycrisp, Fuji, or firm locally grown apples work beautifully. Thin slices: The thinner the apples, the softer and more delicate the cake will be. Texture: Don’t expect a fluffy cake! This dessert should be moist, buttery, and filled with tender apple layers. Cooling: Be patient before slicing. The cake needs time to set so it doesn’t fall apart. #bakingrecipe #applerecipes #FallDesserts #xyzbca #homemade
