It’s mostly because I’m obsessed with the scapes. If you’ve never used garlic scapes before, they’re the curly green flower stems that hardneck garlic produces in late spring. They taste like a perfect blend of garlic and green onion—milder, a little sweet, and absolutely packed with flavor. 🌿 When they’re tender and fresh, I harvest a bunch and make this garlic scape compound butter to freeze and use all year. It melts beautifully over grilled veggies, steak, roasted potatoes, or even just a warm slice of sourdough. Here’s how I make it: 🌱 Garlic Scape Compound Butter Recipe ½ to ¾ cup garlic scapes, minced (I use a food processor for ease) 2 cups unsalted butter, softened 1 tsp sea salt ¼ cup fresh parsley, chopped 💚 Blend everything together until smooth. Spoon into silicone ice cube trays and freeze until firm. Once frozen, pop the cubes into a freezer bag or airtight container. Done!
