Part 2) How to Sharpen a Knife with Japanese Whetstones Be sure to watch part 1 if you haven’t. I break down the basic equipment you need to learn whetstone sharpening. The first stone most people need to use is a lower 200-400 grit whetstone. The coarser grit will remove steel easily and allow you to quickly develop a new edge bevel. The easiest way to begin learning whetstone sharpening is by doing the stropping motion. You move the edge of your knife from tip to heel along the stone, lift, and repeat. Don’t worry about the exact angle you’re sharpening your knife, just keep it consistent as possible. The most important part of developing a new bevel, is creating a burr on each side. The burr tells you when you’ve ground enough steel. By creating a burr on each side, and then alternating to remove the burr, you’re establishing a new rough bevel, which shapes the geometry and angle for your next stone.
