Masaledar Chicken Biryani Ingredients: ½ chicken 5 tbsp oil 3 tomatoes, blended 1 tbsp ginger-garlic paste 3–4 tbsp yogurt ½ cup fried onions 1 tbsp coriander powder 1 tbsp biryani masala 1 tbsp salt 1 tbsp tomato purée 1 tbsp chilli flakes ½ tbsp cumin powder ½ tbsp black pepper powder A handful of fresh coriander Soaked rice Water, salt and food colouring Method: Heat oil in a pan and lightly fry the chicken until golden. Add tomatoes, cover and cook until the water evaporates. Add ginger-garlic paste, yogurt, fried onions, coriander powder and salt. Sauté well. Add tomato purée, chilli flakes, cumin powder and black pepper. Mix well and cook. Add chopped coriander and cook until the chicken masala is ready. Boil water with salt, add the soaked rice and cook until 90% done. Drain. Spread the rice over the chicken masala, add food colouring and cover. Dam for 10–15 minutes.
