Homemade Com Suon Thit Nuong aka Rice with Grilled meat. It sounds fancier in Vietnamese 😝 It’s basically rice with scallion oil and a grilled bone in pork chop. Traditionally the pork chop is grilled over a charcoal fire but we don’t own one. Hubby grilled these on his PitBoss wood pellet grill. The char on the pork chops was perfect! Scallion oil is stupid simple to make. Typically there are slices of tomatoes and cucumbers served on the side with this dish, but I didn’t have any cucumbers. This was a delicious reminder of my motherland and the diverse but simple cuisine of my people. I did my best to replicate the dish with what I have or have access to. It’s traditionally made with something called broken rice or com tam. But I didn’t want to go searching for it or spend the extra money when we already have Jasmine rice at home. #vietnamesefood #Foodie #cooking #porkchops #grilledmeat

Today was bitter sweet 🙏❤️bitter because before we even left the house to go to church trinity already had 3 big seizure’s…. I had a moment of extreme discouragement as I was struggling to get her in the car … But as soon as the discouragement came it left !! HALLELUJAH We ended up having a great time at church , I felt encouraged and ready to continue this good fight in faith 😭✝️❤️ Sometimes pushing through even when we are tired and discouraged is the best thing✝️ Because our strength truly comes from the Lord … YOOD HEY VAV HEY 🙏💯❤️
