Red Pesto & Ricotta Orzo This orzo has been one of my favorite dinners lately for a few reasons. It's easy enough for a weeknight, creamy without feeling too heavy thanks to the ricotta, and the roasted red pepper gives the pesto a deeper, richer flavor. The @colavitausa orzo pasta, sun-dried tomatoes, and extra virgin olive oil are the foundation of this dish and really make everything come together. You can find these products at local grocers and major retailers such as Walmart. #ad #colavitapartner #colavita #itstartswithcolavita Ingredients: 2 medium red bell peppers, halved and seeded 1 head garlic, top trimmed off 4 tbsp Colavita Classic Extra Virgin Olive Oil, divided Kosher salt, to taste 1 cup Colavita Orzo Pasta 1/4 cup toasted unsalted almonds 1/4 cup toasted unsalted cashews 1/3 cup Colavita Sun-Dried Tomatoes, roughly chopped 1/4 to 1/3 cup freshly grated Parmigiano Reggiano 1/2 to 3/4 cup whole milk ricotta For Serving Red pepper flakes, to taste Freshly grated Parmigiano Reggiano Fresh parsley or basil, chopped Instructions Preheat the oven to 425°F. Line a baking sheet with parchment paper. Place the red pepper halves and garlic head on the sheet pan. Drizzle with about 1 tablespoon of olive oil and rub to coat evenly. Season lightly with salt. Wrap the garlic in foil and roast for 20 to 30 minutes, or until the pepper skins are charred and blistered. Remove the peppers and, if needed, continue roasting the garlic for another 10 to 15 minutes, until completely soft and lightly golden. Let everything cool until easy to handle. If your nuts aren't already toasted, reduce the oven temperature to 350°F. Spread the almonds and cashews on a baking sheet and toast for 5 to 7 minutes, or until lightly golden. Watch closely to prevent burning. Bring a large pot of generously salted water to a boil. Cook the orzo according to the package directions. Before draining, reserve about 1½ cups of the pasta water. While the orzo cooks, peel the roasted pepper and squeeze the garlic cloves from their skins. Add both to a blender along with the almonds, cashews, sun-dried tomatoes, Parmigiano Reggiano, and remaining 3 tablespoons olive oil. Blend until mostly smooth. If needed, add 2 to 3 tablespoons of pasta water to help the mixture blend. Add the ricotta and blend again until smooth and creamy. If needed, add 2 to 3 tablespoons of pasta water to help the mixture blend. Transfer the hot drained orzo to a large mixing bowl or saucier. Add about half of the red pesto and 2 tablespoons of pasta water. Stir vigorously until creamy and evenly coated. Continue adding more pesto and a little pasta water at a time until you reach your desired consistency. Taste and adjust with additional salt if needed. Serve immediately in shallow bowls. Top with red pepper flakes, freshly grated Parmigiano Reggiano, and chopped parsley or basil. Enjoy! Note For the creamiest result, make the pesto while the orzo cooks and combine everything as soon as the pasta is drained. The hot orzo and starchy pasta water help emulsify the sauce, creating a smooth, creamy texture without needing additional heat.
