Simple and Authentic Lobia 🫘(Red Kidney Beans) Ingredients: * 1 cup red kidney beans (lobia), soaked overnight * 2 cups water * 5 tbsp cooking oil * 1 tbsp garlic paste * 1 tbsp crushed green chillies * 2 white onions, sliced * 3 tomatoes, blended into paste * 1 tbsp salt * 5 tbsp lobia cooking water * Whole red and green chillies, as needed * A handful of fresh coriander, chopped Method of Preparation: 1. Pressure-cook the soaked lobia in 2 cups of water for 15–20 minutes after the first whistle, until tender. 2. Heat oil in a separate pan. Add garlic paste and sauté, then add crushed green chillies. 3. Add sliced onions and fry until golden brown. 4. Add tomato paste and cook until the water evaporates and the oil separates. 5. Add the boiled lobia, salt and 5 tablespoons of lobia cooking water. Mix well. 6. Add whole red and green chillies and cook until the flavours combine. 7. Garnish with fresh coriander and serve hot with homemade cheesy naan. Techniques & Tips: * Be careful not to over-pressure-cook the red kidney beans. * Add lobia cooking water to help distribute all the flavours throughout the beans. * Fry the onions until golden brown before adding the tomato paste. * Do not add salt to the lobia during pressure cooking; add it to the masala instead. * Important: Red kidney beans must be thoroughly cooked to make them safe to eat.
