These turned out so soft, fluffy, and moist! I especially loved the texture of the streusel topping paired with the pumpkin muffins. Such a cozy little fall bake! 🎃🤎🍂 Recipe by @peyton lane 🤎 🎃 Pumpkin Muffins * 1½ cups pumpkin purée * ½ cup granulated sugar * ½ cup brown sugar * ½ cup vegetable oil * ¼ cup milk * 2 eggs * 2 tsp vanilla extract * 1¾ cups all-purpose flour * 1 tsp baking soda * ½ tsp baking powder * 2 tsp ground cinnamon * 1 tsp pumpkin pie spice * ½ tsp salt 🍂 Streusel Topping * ½ cup brown sugar * ½ cup all-purpose flour * 1 tsp maple syrup (or agave) * ½ tsp salt * ¼ cup unsalted butter, melted 🤍 Vanilla Glaze * ½ cup powdered sugar * 2½ tsp milk * ¼ tsp vanilla extract Directions 1. Preheat your oven to 375°F and line a 12-cup muffin tin with paper liners. 2. Add the pumpkin purée, both sugars, vegetable oil, milk, eggs, and vanilla extract to a mixing bowl. Stir until smooth. 3. Add the flour, baking soda, baking powder, cinnamon, pumpkin pie spice, and salt. Gently fold everything together until just mixed. Be careful not to overmix! 4. Fill each muffin liner nearly to the top with batter. 5. In another bowl, mix the streusel ingredients until small crumbles form. Sprinkle the topping generously over each muffin. 6. Bake for 17–20 minutes, or until a toothpick inserted into the center comes out mostly clean. Mine took 19 minutes! 7. While the muffins cool, whisk together the glaze ingredients. If it’s too thick, add a little more milk, ½ teaspoon at a time. 8. Once cooled, drizzle the glaze over the muffins and enjoy! A little note from my kitchen 🤎 I personally mixed my dry ingredients in a separate bowl and sifted them into the wet batter before gently folding everything together. It’s completely optional, but I find it helpful since I tend to be a little heavy-handed when mixing! 😅 I also used a piping bag for the glaze because it gave me more control over the drizzle, but a spoon works just as well! #bakingrecipe #cozybaking #pumpkinmuffins #bakingtok #fallbaking
