Malaysian Beef Rendang Recipe🇲🇾 (plus jump scare Malaysian accent 🥸) As a Malaysian, this beef rendang really reminded me of home and my family🥹 It was so rich and full of flavour, the beef was so tender, and honestly, it was much easier to make than I expected! I made mine nice and saucy because I LOVE having that rich rendang gravy to spoon over a big bowl of rice or mop up with my roti canai 🤤🍚 This is proper comfort food and one I’ll definitely be making again and again🤎 Ingredients Beef Rendang: * 750g beef chuck, cut into cubes @Meat by THB * 4 tbsp cooking oil * 1 cinnamon stick (about 2-inch length) * 3 cloves * 3 star anise * 3 cardamom pods * 1 lemongrass stalk, cut into a 4-inch length and pounded * 1 cup coconut milk @bluedragon.uk * 1 cup water * 2 tsp tamarind paste * 6 kaffir lime leaves, very finely sliced * 6 tbsp kerisik (toasted coconut) * 1 tbsp sugar, or palm sugar to taste * 2-3 tsp salt, more if needed Spice Paste: * 4 shallots * 1 inch galangal * 3 lemongrass stalks, white part only * 5 cloves garlic * 1 inch ginger * 3 large mild-to-medium fresh mixed chillies, deseeded Method 1. Chop the spice paste ingredients and blend in a food processor until fine. 2. Heat the oil in a large pot. Add the spice paste, cinnamon, cloves, star anise and cardamom pods. Stir-fry until fragrant. 3. Add the beef and the pounded lemongrass stalk and stir everything together for about 1 minute. 4. Add the coconut milk, tamarind paste and water. Bring to a simmer over medium heat, stirring frequently, until the meat is almost cooked. 5. Add the finely sliced kaffir lime leaves, kerisik and sugar or palm sugar. Stir well to combine everything with the beef. 6. Lower the heat, cover with a lid and simmer for about 1½ hours, or until the beef is cooked and tender. 7. Remove the lid and continue cooking for another 15–20 minutes, or until it reaches your desired consistency. I like my rendang nice and saucy, so I left mine with plenty of rich, delicious gravy. 8. Taste and adjust with more salt or sugar if needed. 9. Serve hot with steamed rice or roti canai and enjoy! 🤎🇲🇾 #MalaysianFood #curry #beefrendang #homemade
