@mancancooknz: Lemon Blueberry Cake with Lemon Curd & Blueberry Jam Frosting 🤤🤤 Ingredients 400g flour 3 tsp baking powder ½ tsp baking soda ½ tsp salt 140g butter 150ml neutral oil 430g sugar 5 eggs 1 tbsp lemon zest 1 tbsp lemon juice 300ml coconut milk or buttermilk 2 cups blueberries, tossed in 1 tbsp flour 1 cup lemon curd Blueberry Jam Frosting 280g cream cheese 140g butter 470g icing sugar 1 tsp vanilla 2½ tbsp blueberry jam Method * Mix flour, baking powder, baking soda and salt. * Beat butter, oil and sugar until combined. Add eggs one at a time, then lemon zest and juice. * Alternate adding the dry ingredients and coconut milk until just combined. Fold through the blueberries. * Divide between two 8-inch cake tins and bake at 175°C for 35–40 minutes. * Cool completely, then slice each cake in half to make four layers. * Beat cream cheese and butter until smooth. Add icing sugar and vanilla, then mix through the blueberry jam. * Layer with lemon curd and blueberry jam frosting.
