Greek Quinoa Salad with Greek Meatballs🍅🥒 Consider this part 1 of my anti-inflammatory meal series! My husband has Ulcerative Colitis, and I’ve started to try and cook meals that are on the healthier side for him. It’s not easy😂 Once you start looking into it, it feels like all foods are inflammatory somehow!! Some of the items in meals I post in this series may not be the best for you, so you can tweak it and make it your own! Quinoa Salad: •1 cup dry quinoa •1/2 to 1 large English cucumber •1/2 of a red onion (diced) •roughly 1 cup quartered cherry tomatoes •1 can garbanzo beans (drained) •1/4 cup fresh chopped parsley •6 oz container feta (optional) Dressing: •1/2 cup olive oil •1/3 cup + 1 tbsp red wine vinegar •juice of 2 lemons •1 tbsp dijon mustard •2 tsp honey •1 tsp oregano •1 tsp garlic powder •1 tsp kosher salt •1/2 tsp pepper Greek Meatballs: *if avoiding gluten, leave out the breadcrumbs and the egg* •1 lb ground turkey •1/4 cup Italian breadcrumbs •1 egg •1/3 cup diced red onion •2 tsp oregano •1 tsp garlic powder •1 tsp kosher salt •1/2 tsp pepper •2 tsp lemon juice •1 tbsp fresh dill •2 tbsp fresh parsley •chili flakes (optional) Cook your quinoa according to the instructions on the back of the container. Let it cool down for 15 to 30 minutes before adding the rest of the ingredients. Chop up all your veggies and mix your dressing for the salad. Once the quinoa has cooled off a bit, add everything together, stir, and place in the fridge. For the meatballs, preheat your oven to 400°F. Add all the ingredients to a medium size bowl and mix with your hand. Shape into meatballs and place on a parchment paper lined cookie sheet. Bake for 20 minutes or until center is 165°F internal. #antiinflammatory #healthyrecipe #ibs #ibd #DinnerIdeas
