The neck meat is one of the best meat on a deer. It’s sweet and it makes an excellent soup or roast just like you have right there. I do not waste 1 ounce of neck meat.

This deer season that just wrapped-up, the boys ended with 8 deer to split amongst themselves. There are 12 in the group so everyone scored quite well. They leave tomorrow to Colorado for elk for 10 days. Fingers crossed because I'm looking forward to elk pepperoni and and the two styles of chorizo. Looks scrumptious!!
